Berry Good Blackberry Crisp

Welcome to spring and summer cooking! Blackberry crisp (or any fruit crisp for that matter) is a perfect way to end a bright and fresh meal.

Preheat the oven to 375 F. Toss blackberries in sugar and a squeeze of lemon juice and arrange in ramekins. For the "crisp", or topping, combine 2 parts oats, 1 part flour, 1 part sugar, dash of salt, and butter until course crumbs form. Bake in the oven for about 15-20 minutes, or until the topping is buttery and golden and the fruit juice is bubbling away. Top with vanilla ice cream for an extra sweet finish.
