Banana Walnut Pancakes

The most important meal of the day is breakfast, right? But the real question is: pancakes or waffles... this has caused a great debate over the years as the classics battle it off. In this recipe, I share with you a time tested breakfast staple, but with a twist.

Ingredients:

- 1 cup flour

- 3 tsp. sugar (to taste)

- 1 tsp. baking powder

- pinch of salt

- 1 cup milk (you can substitute with any kind: soy, almond, coconut, etc)

- 2 tbsp. oil (vegetable oil works best, but I used olive)

- 1/2 tsp. vanilla extract

- 1 egg

- 1 ripe banana

- a handful of walnuts chopped

Directions:

This recipe is especially easy to make, simply stir or sift together the flour, sugar, baking powder, and salt together in a large bowl. Next, do the same in another bowl with the milk, oil, vanilla, and egg until everything is evenly combined. Slowly combine the wet ingredients into the dry ingredients and mix until just combined. Now, mash the banana into small pieces: this will depend on how 'chunky' you would like the pancakes to be. Chop up the walnuts so that they are in small bite size pieces. Again this depends on the texture that you like. You could always give them a blitz in a food processor if you would like the pancakes to turn out smoother. Add the banana and walnuts to the batter and stir to combine.

To cook the pancakes, I used about a 1/4-1/3 cup of the batter and cooked it using some olive oil and a non-stick pan. If you have a griddle, that is even better! Let them cook on the first side for about 3 minutes on medium-high heat and then flip them and cook for about 2-3 minutes. Make sure to watch the bottom of the pancakes to avoid burning them.

After piling them high on my plate, I added some fresh sliced bananas and topped the tower with some maple syrup. Enjoy!
