Detox Chicken Noodle Soup

If you guys didn't know, I LOVE soup! It's one of my favorite things to cook and always cheers me up. Today, I decided to experiment with a chicken noodle soup aimed at being detoxifying and cleansing- no crazy seasoning or spices. Whether you feel sick and tired, or just need a delicious lunch recipe, I have got you covered. The recipe is as follows...

Ingredients:

- 3 stalks of celery

- 3 carrots

- 1 red bell pepper

- 3 cloves garlic

- 1 lime (zested and juiced)

- 1 inch knob of ginger

- 1/2 cup shredded chicken

- 1 cup pasta (any type)

- 1 quart chicken stock

- salt to taste

Directions:

The first step is to chop up the celery, carrots, and pepper. For this recipe I cut them up pretty large, so that the vegetables, chicken, and pasta could be relatively the same size. Then, start mincing the garlic until they are fine pieces. Add some oil to a pot on medium heat and wait until it gets hot, then add the vegetables and stir to coat. Add a pinch of salt to help the vegetables start to "sweat" to release their water. After about 5 minutes on medium heat, add in the garlic and stir to combine. Next, cut up the ginger into slices- you can mince it if you like to have ginger in the soup, but I'm just using it as flavoring (this way, you can take out the pieces at the end before serving). Add in the ginger and stir, continue cooking for another 3 minutes, then add the chicken (this is already cooked and shredded). Zest one lime and add into the pot- this well perfume the soup and add great flavor. Add the chicken stock and bring the soup up to a boil, then add the pasta. Bring the soup down to a low boil and wait until the pasta has cooked. Lastly, add the juice of one lime (this is to taste, but I enjoy the zesty flavor) and adding a pinch more of salt.

Serve it up and enjoy!
