Zesty Asain Mixed Greens Salad

For me, nothing really beats a good refreshing salad during the late summer time-- or anytime for that matter. My sister has always teased that I eat 'bunny food', which is true. I just love the flavors of crisp lettuce mixed with savory dressings and the crunchy toppings that add texture and complexity to the dish. Whether you are aiming to become more plant based in your diet, or even just trying to spruce up your dinner plate, this Asian styled salad will surely knock your socks off!

Ingredients:

SALAD

- 1 small box mixed greens

- 2 carrots

- 2 small cucumbers

- 1/2 cup meat of your choice (I had leftover rib meat) ** can be omitted

- 1/4 cup peanuts

DRESSING:

- 1/4 cup lite soy sauce

- 1/4 cup lemon juice

- 1 tbsp. extra virgin olive oil

- 2 tbsp. toasted sesame seed oil

- 1 clove garlic

- 1-inch knob ginger

- pinch red chili flakes

- 1 tbsp. honey

Directions:

There really isn't much to this one, but first slice up your carrots and cucumbers into thin rounds and combine with the mixed greens and meat (if you choose to add it). Obviously, make sure that your meat is cooked all the way through-- this is a great recipe for any leftovers! Toss together with the dressing and serve immediately. Enjoy!
