S'mores Brownies

I have always been jealous of people who have an outdoor fire pit in their backyard. After all, they have infinite opportunities to make s'mores. But, for those who don't have this luxury, I decided to bake up a recipe that could incorporate all of the flavors that draw us back to the campfire treat: the charred, smoky marshmallow, smooth and silky chocolate, and the crispy and nutty graham crackers. I paired the ingredients and flavors together into a brownie, and you will certainly want s'more when you are finished with them!

Ingredients:

- 2 cups chocolate chips

- 1 cup butter

- 1/2 cup light brown sugar

- 1 1/2 cups sugar

- 4 large eggs

- 2 tsp. vanilla

- 2 1/2 cups all-purpose flour

- 2 cups graham cracker crumbs

- 1/4 cup sugar

- 6 tbsp. butter

- 1/4 tsp. cinnamon

- 1/2 bag mini marshmallows

Directions:

First, set the oven to 350 degrees Fahrenheit and lay a piece of parchment in your baking dish. Begin by making the graham cracker crust at the bottom of the brownies. Blitz the graham crackers with a food processor until the texture resembles sand. You can also use a rolling pin to crush the crackers or even purchase pre-packaged graham cracker crumbs. Melt 6 tablespoons of butter in the microwave or in a double boiler. Mix the cinnamon and 1/4 cup of sugar with the gram cracker crumbs and mix with the melted butter. Pat evenly into the bottom of the pan and bake for 10 minutes. Now, work on the brownie batter by first melting the chocolate in the microwave (at 30 second intervals) or in a double boiler until it is smooth and silky. Wait for 5 minutes for the chocolate to cool before adding in the eggs, brown sugar, white sugar, and vanilla. Fold the flour in and make sure that everything is well mixed. Bake in the oven for around 40 to 45 minutes or until an inserted toothpick comes out clean. Add on the mini marshmallows and place the pan under the broiler. This step is totally up to you- you may decide to toast it for less or more time, but keep an eye on the pan as it will burn quickly. Wait for the brownies to cool for an hour before cutting. Be careful, the marshmallow topping makes it extremely difficult to cut. Enjoy!
