Turkey Pad Thai

After the rush of Thanksgiving dinner and the mountains of leftovers piled up in the fridge, the possibilities for recreating are endless. Now, don't get me wrong, the one of the world's greatest sandwiches comes from this. Yet, if you are planning to switch it up a bit this year, try out this turkey pad thai! The blend of spicy, savory, and tangy flavors will surely excite your tastebuds and will be an excellent change in leftover glory.

Ingredients:

- 1/2 package of pasta noodles

- 2 carrots

- 1 cup shredded turkey

- 1 onion

- 3 cloves garlic

- soy sauce

- chili garlic sauce

- apple cider vinegar

- 1/2 cup peanut butter

Toppings:

- handful roasted peanuts

- cilantro leaves

Directions:

First, prep all of the vegetables for the pad thai. Slice the onion and carrots thinly and mince the garlic cloves. Begin to cook the pasta noodles according to the directions on the box. Shred the turkey into small pieces and sauté the vegetables and turkey together in a pan until everything is golden, Next, build the sauce by adding in peanut butter, soy sauce, chili garlic sauce, and apple cider vinegar in the pan, The amount of each ingredient for the sauce depends on how you like your pad thai- more savory, tangy, spicy, or sweet- it can always be adjusted. Add in the cooked pasta into the vegetables and mix together with the sauce. Serve it up after about 5 minutes of simmering on the stove in order to incorporate all of the flavors together, and then top with cilantro leaves and roasted peanuts. Enjoy!
