Pecan Crusted Salmon

Salmon has been one of my absolute favorite proteins for the last couple of years. So, when I decided to cook New Year's dinner for my family and friends, I knew that this would have to be on the menu. This dish is very simple and doesn't require that much prep. It's both soft and tender from the salmon but crunchy from the pecans. Plus, the buttery flavor of the pecans adds a nutty aroma and depth to your plate. Here's the recipe:
Preheat the oven to 425 degrees F. Prepare the salmon by seasoning with a pinch of salt, pepper, minced garlic, fennel seed, and red chili flakes. On the bottom of a baking dish, add in sliced lemon and whole garlic cloves. This creates a little bed that the salmon rests on when it is cooking. Chop about a cup pecans into small pieces and press into the top of the fish. Bake until the fish is tender and flaky, about 15-20 minutes. Enjoy!
