Aureole: Manhattan, NY

It's summer and that means that the summer menus are out! Earlier this week, my family went out to dinner with our family friends at Aureole in Midtown, Manhattan. I've been here before, for restaurant week 2017. But, of course, the menu had changed.

This year, I had:

Yuzu cured salmon

Marinated heirloom tomatoes (Vermont mozzarella, basil pesto, elderflower vinaigrette)

Beef tenderloin (fingerling potato purée, broccolini, salsa verde)

Black sesame and passionfruit sorbets

Tasting of ice cream and sorbets

Selection of Murray's artisanal cheeses

A clean kitchen is a happy kitchen.  Always keep your working surfaces clutter free.

Cook with your instinct and not the cookbook.  Add in a little bit of yourself to make each dish unique.

A splash of lemon, lime, or vinegar can brighten a dish immeasurably.
