Grilled Peaches with Mozzarella and Balsamic Glaze

Grilled peaches. Doesn't that just sound like summer on a plate? Yesterday, family friends came over and we had a massive BBQ dinner. I'm not even joking you, there are so many leftovers. Now you're probably wondering, what did you guys exactly eat? Well, my mom made her famous ribs and chicken wings. I ventured out to make this grilled peach and mozzarella dish.

Peaches are super sweet and juicy this time of year- they are in season after all. But, when we normally think of peaches, desserts come to mind. I decided to grill them.

All you have to do is slice up peaches and mozzarella. Grill the peaches until you begin to see the marks on the fruit. You don't necessarily want to cook them, but rather just bring in more flavor.

To make the balsamic glaze, pour balsamic vinegar in a small saucepan. Heat on low until the level has decreased by half. The vinegar will reduce to a thick glaze, perfect for drizzling on top of the peaches and mozzarella. Add in some fresh mint, toasted pine nuts, and a pinch of salt and you're finished! Enjoy!
