Green Bean Salad with Heirloom Tomatoes

My favorite kinds of salads are the simple ones that let the ingredients shine. This green bean salad with heirloom tomatoes is just that. It only takes a few items for this dish to come together, but make sure you're buying the best quality produce. There's no place to hide here!

There aren't exact measurements for the vegetables in this salad. Toss together green beans, sliced heirloom tomatoes, sliced radish, and chopped parsley. For the dressing, I made a simple lemon vinaigrette using lemon juice, honey, extra virgin olive oil, salt, and pepper.

Squeeze the juice of a whole lemon a glass (I like using mason jars and pyrex measuring cups). Add in about a teaspoon of honey, and a pinch of salt and pepper. Drizzle in the olive oil while mixing constantly until the liquid is emulsified and thickened slightly, about a quarter cup of olive oil.

Toss everything together and top with sesame seeds. Enjoy!
