Ginger, Garlic, and Scallion Broth

When fall weather hits and cold season is in the air, there's nothing that I crave more than soup. This ginger, garlic, and scallion infused broth with soy sauce, white pepper, and tofu makes for a cozy start to a night in.

Ingredients:

- 1 inch piece of ginger

- 1 scallion

- 2 cloves garlic

- pinch white pepper powder

- tsp. soy sauce

- 1/3 box of silken tofu

- 16 oz chicken stock

Directions:

Peel and slice the ginger into rounds and smack with the back of your knife. Slice scallion into long pieces and cut across length-wise. Smash the two cloves of ginger. Combine ginger, garlic, scallion, soy sauce, white paper, and chicken stock on the stove stop to a light simmer. Dice tofu into small cubes and add. Allow the soup to cook for another 5-10 minutes, stirring occasionally. Enjoy!
