Blistered Shishito Peppers w/ Lemony Soy Sauce

With an earthy sweetness and slight char, blistered shishito peppers are the new stars of your finger food and appetizer spreads! They are wonderfully simple to make and irresistible when dipped into lemon and soy sauce.

Ingredients:

- 7 oz shishito peppers

- 2 tbsp olive oil

Toppings:

- pinch of flaky salt

- juice of half a lemon

- 2 tbsp soy sauce

Directions:

1. After washing, make sure to dry the peppers extremely well to avoid oil splatters.

2. Preheat skillet with oil until the surface shimmers.

3. Add shishito peppers in batches and cook until the skin is wrinkly and slightly charred (I also use a splatter guard). You can also poke a hole in each pepper to keep them from bursting.

4. After cooking, transfer to a paper towel covered tray to soak up excess oil.

5. Mix together lemon juice and soy sauce.

6. Transfer shishito peppers and dipping sauce to a plate and sprinkle with flaky salt. Enjoy!
